chore: version packages for 2.0.0-beta.0

Runs changeset version for the first beta release, with the prerelease counter manually reset so @solidjs/start ships as 2.0.0-beta.0 instead of 2.0.0-beta.4.

Changesets continues the prerelease counter across tag renames (it increments the numeric suffix of the current version regardless of tag), so after the alpha→beta tag change in #2180 it generated 2.0.0-beta.4. This PR rewrites that to 2.0.0-beta.0 in package.json and the changelog heading — safe since 2.0.0-beta.0 was never published and still sorts above 2.0.0-alpha.3; future releases continue from it as beta.1, beta.2, etc.

Also includes @solidjs/vite-plugin-nitro-2@0.3.1
